Pulsed Light Reduces Allergens in Peanuts

GAINESVILLE, Fla., June 15, 2011 — Pulsed UV light can reduce the allergenic potential of peanuts by up to 90 percent, a discovery that may help make food safer for people with nut allergies. The concentrated bursts of light, known as PUV, changes peanut allergens so that human antibodies cannot recognize them and cause the release of histamines, which are responsible for allergy symptoms such as itching, rashes and wheezing. “We believe the allergen can be controlled at the processing stage, before the product even goes to the shelf,” said Wade Yang, an assistant professor in the University of...Read full article
